added their own twist coconut in South India, mustard in Bengal

 and green chilies in Pakistan.

🍳 Egg Curry Recipe (Serves 4)





Ingredients:

Instructions:

  1. Boil 6 eggs, peel them and gently prick each egg 

with a fork so they absorb the flavor.

  1. Heat 2 tablespoons of oil in a pan and lightly fry the eggs

 with a pinch of salt and turmeric until golden. 

Remove and set aside.

  1. In the same pan, add finely chopped onions and sauté

 until they turn golden brown.

  1. Add 1 teaspoon of ginger garlic paste and cook for 

1-2 minutes until the raw smell goes away.

  1. Add  blended tomatoes and cook until they become soft 

and the oil separates.

  1. Mix in 1/2 teaspoon turmeric powder, 1 teaspoon red chili 

powder, 1 teaspoon coriander powder, and salt to taste.

 Cook for 2-3 minutes.

  1. Pour in half cup of water to make the gravy and gently 

add the fried eggs.

  1. Let the curry simmer on low heat for 8-10 minutes so the

 flavors mix well.

  1. Sprinkle 1/2 teaspoon garam masala and garnish with fresh

 chopped coriander leaves.

  1. Serve hot with rice, roti, or paratha.
