Ingredients
For Chicken Tikka Marinade
1/2 kg chicken
(boneless or with bone, medium pieces)
1/2 cup thick yogurt
2 tbsp ginger-garlic paste
2 tbsp lemon juice
2 tbsp cooking oil
2 tsp red chili powder
Coal piece ( for smoke)
(adjust to taste)
1 tsp Kashmiri red chili powder (for color)
2 tsp roasted cumin & coriander powder
2 tsp chicken tikka masala
Salt to taste
For Rice
1kg or 4glass rice
(washed & soaked for 30 minutes)
t5 glasswater or as ur requirement
2 bay leaves
1 cinnamon stick
1 tsp cumin seeds
Salt to taste
For Biryani Masala Base
5 medium onions (thinly sliced)
1 cup cooking oil or ghee
2 tbsp ginger-garlic paste
2 medium tomatoes (blended)
2 tbsp biryani masala
1 tsp red chili powder
Salt to taste
½ cup yogurt
For Layering & Dum
½ cup fresh mint leaves
½ cup fresh coriander leaves
3–4 green chilies (slit)
food color
2 tbsp ghee
Method
Step 1: Marinate the Chicken
In a large bowl, add chicken and all marinade
ingredients. Mix very well until chicken is fully coated.
Cover and refrigerate for at least 3hours (overnight is best).
This step is key for juicy and flavorful tikka.
Step 2: Cook the Chicken Tikka
You can cook chicken using any method:
Pan Method:
Heat a grill pan or heavy pan with little oil.
Cook marinated chicken on medium-high flame until
slightly charred and fully cooked.
( Smoke):
Place hot coal in a bowl, add a few drops of oil,
cover the chicken for 5 minutes for smoky flavor.
Set chicken aside.
Step 3: Prepare the Rice
Boil water in a large pot. Add whole spices and salt.
Add soaked rice and cook until 70–80% done
(rice should still have a bite).
Drain immediately and set aside.
Step 4: Make the Biryani Masala Base

Add sliced onions and fry until golden brown.
Add ginger-garlic paste and sauté until fragrant.
Add tomato puree, salt, red chili powder, Tamarind
and biryani masala.Cook until oil separates.

Now gently add cooked chicken tikka pieces and mix
lightly. Cook for 5–7 minutes so flavors combine.
Step 5: Layer the Biryani
Lower the flame.
Add a layer of rice over the chicken masala.
Sprinkle mint, coriander,food col, green chilies
and ghee.Repeat layers if needed, finishing with
rice on top.
Step 6: Dum (Final Cooking)
Cover the pot tightly (use foil if needed).
Cook on low flame for 15–20 minutes.
Turn off heat and rest for 10 minutes before
serving.
