desi gur, and aromatic spices. This traditional recipe is

Ingredients for 

Traditional Gur Walay Chawal

  • Basmati rice – 500g

  • Desi gur (jaggery) –400g (grated)

  • Water –1cups

  • Desi ghee – 3 to 4 tablespoons

  • Green cardamom – 3 to 4 pods

  • Fennel seeds (saunf) – 1 teaspoon (optional)

  • Almonds or coconut slices – optional


How to Make Gur Walay Chawal 

Step 1: Prepare the Rice

Wash basmati rice thoroughly until water runs clear. 

Soak for 20–30 minutes, then boil and 

Set aside.

Step 2: Melt and Strain the Gur


In a pan, add jaggery and 1cups of water.
Cook on low flame until fully melted.
Strain the jaggery syrup to remove impurities 

and set aside.

Step 3: Make the Aromatic Base

Heat desi ghee in a heavy pot.
Add  green cardamom and fennel seeds.
Let the spices release their aroma.

Step 4: Add Rice

Pour in the strained jaggery water.
Then add rice and mix well.
Cook on medium heat until water is absorbed.

Step 5: Cook the Rice

When rice forms holes and water dries,

cover tightly.
Place on low flame for 15 minutes for perfect 

dum.



Step 6:  Final Touch

Gently fluff the rice.
Add almonds or  if desired
